Broken Locust Potato Salad

Today, to go along with our collaboration with our friends, Pat and Sherry from Broken Locust, I am offering you our recipe for Broken Locust Potato Salad. I am not normally a potato salad lover. The texture, the eggs, the mayonnaise, it's all a bit much for me. However, one bib overall potato salad lover has been requesting this recipe idea for quite some time. With a hint of spring in the air, I thought I would make my favorite bib overall-wearing buddy: bratwursts and Broken Locust potato salad. Much to my surprise, I found myself enjoying this version of potato salad.
The Broken Locust Tuscan Tomato spice blend is our favorite. Eric mixes two packets of the spice blend into a jar of Helman's Mayonnaise and eats it on everything from burgers to breakfast sandwiches. This mixture has become a staple in our home. Adding it to potato salad was Eric's idea, and dear reader, it was a good one.
Broken Locust Potato Salad
Ingredients:
5 lbs. Yukon Gold Potatoes, peeled, cooked, cooled, and cut into cubes
6 Hard Boiled Eggs, chopped
1 Ib. Cherry Tomatoes, chopped
1 bunch Green Onions, chopped, or Red Onion can be used
1 bunch Celery, finely diced
Dressing:
2 Cups Helman's Mayonnaise with Broken Locust Tuscan Tomato spice blend mixed in
1/2 cup Parmesan Cheese
1 small jar Sun Dried Tomatoes
A splash of Olive Oil
(You could also add olives, fresh basil, or bacon)
Directions:
In a very large bowl, layer the salad ingredients.
In a small mixing bowl, blend the ingredients for the dressing and mix well. Add enough olive oil to create the consistency you like for your dressing. I added about a tablespoon.
Pour the dressing over the salad ingredients and gently blend, ensuring all ingredients are coated.
Refrigerate for several hours or overnight to allow the flavors to meld.
