Foodie Friday: Broken Locust's Cucumber Salad

Welcome to Friday, dear reader! We made it through a short week, but what a week it's been. Today, I will share Pat and Sherry's delicious recipe for fresh, summery cucumber salad. I love "creamed cucumbers," "cucumber salad," or "creamy cucumbers." It goes by a lot of names in our home, and there is always controversy over which name is correct (insert an eye roll, a long sigh, and a woe-begone face of annoyance). Whatever you call it, it's even more delicious with my sweet friend's custom spice blend.
Tomorrow, Patrick, aka Pat the Great, will be giving our first-ever market demonstration on how to create this culinary delight. Pat is Grade-A, and we appreciate his bravery for being the first to do a public demonstration. I have no worries, Patrick is a great public speaker. Seriously, with that voice, he should be a DJ. You will find the full selection of spice blends, dip mixes, and hand-blended herbal teas at the Broken Locust tent at our market. Along with a variety of top-quality artisan creations, culinary delights, food truck heaven, and of course, some pretty good goat's milk soap, if I do say so myself. (Insert a wink).
Sherry's recipe for creamy cucumber salad is delightful, delicious, and so very easy. I hope you come out to see all of us here at the farm, 493 Tonkin Road, Indiana, PA 15701, from 10 until 2. The weather looks perfect, the farm will be filled with wonderfully creative and talented artisans, food demonstrations, and, as one bib over all wearing wonder buns likes to say, "You won't find better company." He says a lot, most of which I can't publish.
Broken Locust's Creamy Cucumber Salad
Ingredients:
1 cucumber sliced
1/2 cup of sour cream
3 Tbls. of Mayonnaise
1 1/2 Tbls. Dill-Ectible spice blend
1/2 small red onion, sliced
2 Tbls. Vinegar
2 tsp. Sugar
In a medium mixing bowl, combine all ingredients until smooth and creamy.
Fold over sliced cucumbers and gently blend until coated.
Serve immediately or refrigerate for a few hours to allow flavors to merge.
