Foodie Friday: Air Fryer Zucchini Crisps

It is the time of year when everyone who knows someone with a garden is gifted garden-fresh zucchini. My grandmother used to say that if you have to buy zucchini during the peak gardening season, your life is very sad. Erica was generous enough to gift us several zucchini. We love fried zucchini, but I am trying to follow the anti-inflammatory diet, and fried food does not fit into that category. However, I did try an Air Fryer recipe, and it was really good.
To make Zucchini Crisps in the Air Fryer, you simply cut the zucchini about 1/2 inch thick, toss it in olive oil, sprinkle it with Broken Locust's Italian seasoning blend, place it in a single layer in the air fryer, and cook it at 400 degrees for 10 minutes. I shook the basket about halfway through the cook time, and it turned out perfectly crispy and delicious.
What I like about this recipe is that you don't have the mess from deep frying, it is delicious and healthier than if it were cooked in lard, and it cooks a large batch in just a few minutes. I paired it with a turkey breast that I cooked in the crock pot. We had a simple, healthy, clean meal that is anti-inflammatory and good for you.
