Foodie Friday: Baked Parmesan Squash

Welcome to Foodie Friday, dear reader. Many of you are coming to the end of your seasonal garden harvest. If, like so many, you have an abundance of yellow squash or zucchini, this recipe is for you. Although I did not plant a large garden this year, I am planning small vegetable plots for next year. The gardening bug has bitten me, and I hope to plant some flowers, trees, and garlic before fall ends. However, if you're dealing with a big squash harvest, or just seeing a lot of squash at the farmer's markets this time of year, this easy recipe is a great way to use up those lovely green and yellow squash.

 Baked Parmesan Squash consists of five ingredients: freshly grated Parmesan cheese, salt and pepper, and squash. It's simple, one-pan, easy to clean up, and very tasty. This makes an excellent side dish or a simple meal when served with a salad. 

Baked Parmesan Squash

Ingredients:

2 Medium Yellow Squash

Salt and Pepper to Taste

1/2 tsp. Garlic Powder

1/2 Cup of Freshly Grated Parmesan Cheese

 

Directions:

Line a baking sheet with parchment paper.

Slice squash into even 1/4 inch rounds

Place squash in a single layer on the parchment paper

Add salt and pepper to taste

Sprinkle the squash with the Parmesan cheese and garlic powder

Bake at 425 for 20-30 minutes

Serve immediately for the best texture and taste.
