Foodie Friday: Street Corn Chicken Bowls

If you have been following along for a while now, you know I like an easy recipe. I use my classic crockpot on a weekly basis. I like sheet pan recipes. I love a good bowl recipe that comes together easily and requires very little fuss. I like meals that are nutritious, comforting, and most of all come together easily. We wear so many hats around here, I don't really have the time or inclination to wear a professional chef's hat. I do, however, like to feed my family meals they enjoy, make them smile, and end with my bib overall wearing buddy saying, "Good meal, lady. Thank you."

At our house, we have an eclectic palate. We do not discriminate against any food. I cook, and we eat everything from traditional Chinese meals, thanks to my friend CeCe. Mexican food is always popular. Thai, Italian, Pennsylvania Dutch, Polish, and Mediterranean, to name a few, are also a big part of our meal rotation. There are very few ingredients I refuse to try. The only firm no's in the kitchen for me are veal and lamb. I can't eat baby anything. 

We ate goat, once and only once. We ate George. Nobody liked George. George was utterly void of personality. He was always exactly where you did not want him to be, and it was difficult at best to move George from said place. George was not nice to the other goats. George was a jerk if I'm being honest. I ate George without regrets. No, eating George was not an issue for me. I enjoyed eating George. However, we have never had another George, and nobody else has been eaten since George. I am sure some of you find this shocking, given my love for my goats. I, too, found this shocking about myself. If I'm being completely transparent, goat meat is delicious. It has a sweet quality that is delightful. I, however, cannot make it a regular part of my diet. Although the Bibbed Wonder should take pause, considering I ate an animal that I generally adore. I may comment on those wonder buns for gourmet purposes...insert a wink.  

Today, I will share with you a recipe I tried a few weeks ago. I am a great fan of Mexican Street Corn. I find it absolutely delightful, and when I come across a restaurant or street vendor that sells it, I always partake. (Don't worry, George is not part of the recipe.) This recipe is for a Mexican Street Corn Bowl, which I find even more delightful. It is a blend of marinated chicken, rice, and roasted or grilled corn. It is an easy dish, but it requires a bit of planning, since you must marinate the chicken. This recipe can be made on a grill or a broiler. Our grill is buried under feet of snow, so I used the broiler. However, the grill will add a layer of warm, smoky flavor that would be delicious. 

Eric complimented the meal, and The Bean had seconds, which is always a sign of success. It comes together fairly easily, requires little cleanup, and has a bright southwestern flavor that is perfect for this time of year. I hope your family enjoys it as much as we did.

Mexican Street Corn Bowl

Ingredients

For the Chicken:

4 Boneless, skinless chicken breasts

1 TBLS. Lime Juice

1 TBLS. Avocado oil

1 tsp. Chili powder

1 tsp. Garlic

1/2 tsp. Salt

1/4 tsp. Black pepper

 

For the Corn:

I cup  Sweet corn kernels (grilled or roasted is best)

1/4 cup Diced red onion

1/2 cup Sour Cream

2 TBLS. Mayonnaise

1/2 cup Cotija cheese 

1 tsp. Chili powder

Salt and pepper to taste

 

Plus:

3 cups Cooked Rice

Fresh Cilantro for garnish

 

Directions:

-In a mixing bowl, combine all ingredients for the chicken marinade. Marinate the chicken for at least an hour, but I did it overnight. 

-Heat a skillet over medium heat.

-Add the marinated chicken and cook thoroughly, or until the internal temperature reaches 165 degrees. 

-Let the chicken rest for a few minutes before slicing it into bite-sized pieces. 

-In a mixing bowl, combine all ingredients for the grilled corn. Adjust seasonings if desired. 

-Cook the rice according to the package directions. 

-Assemble the Bowls with the rice as the base, and topped with the corn and chicken. 

-Garnish with additional lime juice and cilantro if desired.
