Foodie Friday: The All-American Casserole

Welcome to Foodie Friday, dear reader. This week, I will share a rather amusing and delicious casserole that my bean declares is unmistakably all-American. I found this recipe in my cookbook from the fort in Penn State. In the cookbook, it is called Cheap Skate Casserole...which made me giggle and intrigued me. There are three simple ingredients, it takes about forty-five minutes to prepare, and it is unabashedly an American creation. By the way, The Bean was not complimentary in her declarations. Her disdain also made me giggle. I hate calling this a recipe, dear reader, but it was in a cookbook, so technically it is a recipe.
I thought the meal was delicious, easy, kind of funny, and screams American summer. Without further ado, the All-American Casserole.
The All-American Casserole
-28 oz. can of baked beans (I used Bush's Maple Bacon Baked Beans)
-1 package hot dogs, sliced (The Bean only eats Hebrew National Hot Dogs)
-1 package cornbread (the recipe calls for Jiffy, but I used Krustez Honey Cornbread)
Directions:
-Pour the beans into a prepared 9x13 baking dish.
-Top the beans with the sliced hot dogs.
-Prepare the cornbread mix according to the package directions.
-Spread the cornbread mix over the hot dogs.
-Bake for 45 minutes at 375 or until a knife comes out clean from the center of the cornbread.
-Let the dish stand for five minutes before serving.
It doesn't get any more American than hot dogs, baked beans, and cornbread, dear reader. This is a fun and simple recipe that is perfect for an outdoor barbecue or a simple weeknight meal.
