Foodie Friday: The Robert Redford Dessert

Welcome to another Foodie Friday, dear reader. Today, the recipe I will share is from a much-loved local restaurant that has since closed and now offers catering only. The restaurant was called Mary's Place. They were located just outside of Punxsutawney in a charming little house. They had THE best food and desserts. They offered a dessert they called The Robert Redford. This was a pudding-based dessert with a pecan crust, a creamy peanut butter layer, and whipped topping. It is so delicious.
I love pudding. I actually think that pudding is my all-time favorite dessert. I crave the old-fashioned, homemade Hershey's chocolate pudding; however, any pudding-based dessert appeals to me. I'm unsure why this dessert popped into my head from absolutely nowhere, but after thinking about it for a few days, I just had to make it. Now, I don't have the recipe from Mary's Place. However, I found this recipe on Food.com, and it appears to have all the ingredients that I remember. So, dear reader, prepare yourself for a no-bake, delicious peanut butter treat.
- 1 1⁄2cups flour
- 1⁄2 - 1cup butter
- 1cup pecans, chopped
- 1large cream cheese
- 1cup confectioners' sugar
- 1cup peanut butter
- 1(3 1/2 ounce) box vanilla pudding mix
- 1(3 1/2 ounce) box chocolate pudding mix
- 3cups milk
- 1cup Cool Whip

Garnish
- additional Cool Whip
- nuts, and
- chocolate
Directions:
- Melt butter; mix with flour and press into a baking pan.
- Pour pecans over and press down.
- Bake 15 minutes at 350 degrees Fahrenheit.
- Cool.
- Mix cream cheese with confectioners' sugar and peanut butter.
- Mix well.
- Pour over the crust.
- Mix vanilla and chocolate pudding mixes with the milk and Cool Whip.
- Beat well.
- Pour over peanut butter layer.
- Garnish with additional Cool Whip.
- Sprinkle with nuts and chocolate as desired.
