Foodie Friday: Winter Fruit Salad

With the cold months, the flu going around with a vengeance, and the desire to eat healthier, I wanted to share a recipe I came across on a favorite recipe site, Natasha's Kitchen, for a winter fruit salad. After the holidays and meals of red meat, butter-laden side dishes, and sweets, I am craving "real" food. Nothing processed, nothing chemical laden, just simple, clean food. Winter fruit salad sounded like exactly what I was craving, and it tastes terrific.
Winter fruit salad is easy to prepare; it just takes a bit to peel and cut all the fruit. It has a light, healthy dressing that adds a hint of zhuzh. Everything is readily available in the produce aisle. It's an easy, fresh, and healthy recipe to counteract all the indulging I did over the holiday.
Winter Fruit Salad Ingredients:
1 pound (5 count) Clementine oranges, peeled and separated into segments
2 pears, cored and sliced
2 apples, cored and sliced
1 large pomegranate, seeded (1 to 1 1/2 cups arils or seeds)**
4 kiwis, peeled and sliced
Lemon Lime Syrup:
3 Tbsp honey
2 Tbsp fresh lime juice, from 1 medium lime
2 Tbsp fresh lemon juice, from 1 medium lemon
I used Pisarcak's honey because it's divine, and instead of clementines, I used Sumo fruits. The Bean loves pomegranates, so this was perfect for our family. This light, simple salad is delicious on its own or as a side dish to breakfast for dinner. I hope you enjoy it as much as we did.
