Thanksgiving Shepherd's Pie and Black Friday Savings

Welcome to Friday, dear reader. It is the day after Thanksgiving and the day that kicks off the holiday gift-giving season. I hope your Thanksgiving was filled with friends and family, good food, good times, and wonderful memories. I spent the day with some of my favorite people. My day was spent feeling thankful for this amazing little life. It's a good one. Now that the big day is over, most of us are thinking ahead to Christmas and holiday gifts. Today is traditionally the day when all you die-hard shoppers go out at crazy hours to take advantage of holiday sales.
I will not be amongst you. Instead, we will be here on the farm doing what we do, offering online savings, and packing orders. This is a busy weekend for us, and after cooking for two days in preparation for Thanksgiving, I am back to my easy meal mentality. Today, I will tackle some of those leftovers. My bib overall-wearing buddy is a pickle about leftovers. GramBarb spoiled him as a child by turning leftovers into new, exciting, and delicious meals. I am of the mindset that one should be happy with leftovers microwaved for 1 minute on a paper plate and be grateful that someone cooked a good meal the day before... sigh. After growing up with GB, the Bibbed Wonder expects me to take perfectly delicious leftovers and turn them into something new and magical. He's a lot.
For lunch, I am going to make my version of a Thanksgiving Shepherd's Pie. There is no real recipe; I am taking our leftovers and creating a casserole. I plan to layer leftover stuffing on the bottom, top it with turkey, gravy, peas and carrots, with a mashed potato "crust" on top. I will add 1/2 teaspoon of rosemary and garlic powder to the mashed potatoes, bake for 40 minutes at 350 degrees, and serve warm with a side of cranberry sauce. I also plan to use a chopstick as a magic wand, cover the casserole with a tea towel, make a big production of saying "ABRA CADEABERA!" and "WA-LA!" as I present my magical leftover casserole to one bib overall wearing pain in the a**. Seriously, now all the different foods are touching each other and all mixed up. Personally, I believe a paper plate in the microwave with individual servings of leftovers is just as good, no, better, but what do I know?
