What's For Dinner On The Farm: Egg Casserole with Hashbrowns

Eggs are fast becoming a staple of our weekly meal planning. I have so many eggs, dear reader, that I don't know what to do with them all. We eat a lot of eggs, egg casseroles, quiches, and eggs in oatmeal. My coat should be very shiny and healthy, Ha! I found a delicious casserole recipe on the Spend With Pennies website. If you have time and the inclination, she has some really great recipes. I use her as a go-to for recipe ideas. 

I consider this recipe a great success because Jordan, who can be a finicky eater, enjoyed it. With a layer of shredded potatoes on the bottom, it was a perfect one-dish meal. Anytime The Bean has a second serving, I consider it a win. If you make this dish, I hope you enjoy it as much as my family did. If you are local and need eggs, please let me know. 

Hashbrown Breakfast Casserole

  • 20 ounces of shredded hash browns, thawed
  • 1 pound ground pork sausage cooked, crumbled, and drained
  • ¼ cup finely diced onion
  • ½ red bell pepper, diced
  • ½ green bell pepper diced
  • 2 cups shredded cheddar cheese divided
  • 8 eggs
  • 12 ounces evaporated milk, 1 can, or 1 ⅓ cups milk
  • ½ teaspoon Italian Seasoning or your favorite herbs and spices, optional
  • ½ teaspoon Kosher salt or to taste
  • ¼ teaspoon black pepper

Directions:

  • Preheat the oven to 350°F (if baking immediately). Grease a 9×13-inch pan or a 3qt baking dish or spray with cooking spray.
  • Heat a large skillet over medium-high heat. Brown the sausage, breaking it up with a spoon, until no pink remains. Drain fat.
  • In the prepared dish, add the hashbrowns, cooked sausage, onions, bell peppers, and 1 ½ cups of cheese. Gently mix the ingredients together and spread evenly in the pan.
  • In a large bowl, add the eggs, evaporated milk, salt & pepper, and Italian seasoning to a large bowl. Whisk until well combined.
  • Pour the egg mixture over the hash brown mixture and sprinkle the remaining cheese over the top.
  • Cover the dish with foil and refrigerate overnight if desired, or bake immediately.
  • Bake uncovered for 55-65 minutes or until cooked through.

I have used sausage or ham cubes in this recipe. If you use ham, you can skip the extra step of frying it. I like that. I served this with fruit salad and toast. However, you can serve it alone for a one-dish meal with easy clean-up. 

So, dear reader, that is what is for dinner on the farm. We like to keep it simple, farm-fresh, and seasonal, but mostly, we keep it pretty easy. It's a great meal for a Friday night. On this spring Friday, stay safe, be smart, enjoy simple and delicious food, and keep washing your hands.
