Foodie Friday: Creamy Tomato Gnocchi Soup




This week, I tried a new recipe. Of course, it was a soup recipe. This time of year, I crave warm, comforting food that is easy to prepare. Most importantly, my little bean liked this recipe and declared it in her top three soup recipes. Her opinion matters most in our house because she is the pickiest eater and the most vocal about her likes and dislikes.


This warm, filling, comforting soup is an easy fix that is ready in under thirty minutes. The ingredients are simple and straightforward without a lot of fluff. To make this a balanced meal, I served this soup with garlic bread and a salad. Without further adieu, I share with you Creamy Tomato Gnocchi Soup.


Creamy Tomato Gnocchi Soup


Ingredients:

1 TBLS. Olive Oil

2 TBLS. Butter

1 Medium Onion, Finely Chopped (I use my food processor to make it consistent and too small for The Bean to pick out or complain.)

4 Cloves Garlic

1 28 oz. Can Crushed Tomatoes

1 TSP. Italian Seasoning

Salt and Pepper To Taste

1 Cup Heavy Cream

4 Cups Chicken or Vegetable Broth

1 Cup Water

1 Package of Frozen Gnocchi Pasta

A Handful of Fresh Basil Finely Chopped (Again, I use my food processor. If the basil is too big, The Bean complains.)


Directions:

Melt the butter in a large stock pot and add the olive oil. Add the onion and saute until slightly browned. Next, add the garlic and saute until fragrant, about five minutes.


Add the broth, water, heavy cream, crushed tomatoes, Italian seasoning, salt, and pepper. Bring to a gentle rolling boil, and add the gnocchi. Stir the mixture frequently.


Lower the heat and simmer for fifteen to twenty minutes. During the last five minutes, add the fresh basil and continue to simmer.


Serve hot with a nice salad and garlic bread.
