Foodie Friday: Peanut Butter, Chocolate Chip, & Marshmallow Sandwich Snack





Happy Foodie Friday, dear reader. Today, I am going to share with you a favorite snack here on the farm. My bean and I have a strong sweet tooth, and although I encourage her and myself to make healthy choices, sometimes nothing will suffice except pure unadulterated sugar. My bean loves Little Debbie Swiss Rolls and Reese’s Peanut Butter Cups. I make sure to keep our cupboards stocked with both, but as is often the case, there are times our cupboards are void of her favorite junk foods. On one of these occasions, I had to get creative in satisfying a sweet craving.


Not having the time or the energy to bake cookies, I threw together, I mean created what is now one of our favorite snacks, a peanut butter, chocolate chip, and marshmallow grilled sandwich. This is as simple as you can get, dear reader.


Ingredients:

Bread

Butter

Peanut Butter

Chocolate Chips

Miniature Marshmallows


Directions:

Spread bread with peanut butter. Sprinkle chocolate chips evenly over peanut butter, then add a layer of miniature marshmallows. Place the second piece of bread atop the layers. Spread a thin layer of butter over both sides of the bread—place the sandwich and the butter side down on a hot griddle. Cook until golden, flip, and cook another side until golden. Serve warm with a cold glass of milk.


The Bean often eats this as an after-school snack or as a bedtime snack. When her favorite snacks are unavailable, this sandwich is a tasty, warm treat that never disappoints.
