Foodie Friday: Sesame Garlic Ramon Noodles

Now that The Bean is home for the summer, I am constantly searching for easy lunch ideas that she will eat. The Bean can be a picky eater, and finding easy, nutritious meals she enjoys is challenging. My favorite goobers are always excited about Asian cuisine. We do a lot of stir fry, lo mein, and chicken meals because they incorporate vegetables and are always a crowd pleaser.


Recently, The Bean has discovered she likes spicy noodles; apparently, it is a TikTok thing. My girl will immediately jump on the bandwagon if it is on TikTok. Making spicy noodles is an easy lunchtime meal I can put together in minutes and sneak in a few veggies like snow peas, water chestnuts, carrots, and broccoli. Today I will share a recipe for spicy noodles that has been well-received in our home. This recipe is from The Salty Marshmallow website and blog.


Ingredients:


2 3 Ounce Packages of Ramen Noodles

2 Teaspoons Sesame Oil

2 Cloves Garlic, Minced

¼ Cup Soy Sauce** Low Sodium is Best

1 Teaspoon Brown Sugar

2 Teaspoons Sriracha*


Instructions


Cook the ramen noodles as directed on the package. Discard the seasoning packets. Drain and set aside.


Heat the sesame oil in a small skillet or saucepan over medium heat.


Cook the garlic, stirring constantly, for two minutes.


Remove the pan from the heat and whisk in the soy sauce, brown sugar, and Sriracha until combined.


Toss the noodles with the sauce.


Garnish with shredded carrots, green onions, pickled ginger, and sesame seeds.

This recipe is an easy meal that serves four. I like it because it can be made in minutes, doesn’t require a hot oven, and is delicious. On this overcast Foodie Friday, stay safe, be smart, enjoy simple, delicious food, and keep washing your hands.
