Foodie Friday: Crock Pot Pepper Steak




Welcome to Foodie Friday, dear reader. Once again, we have made it to the end of another week. In keeping with the theme of easy, convenient, delicious meals, I’m sharing my Crock Pot Pepper Steak recipe. I utilize my crock pot a lot. However, this time of year, it gets an extra hard workout. Between feeding baby goats, delivering baby goats, caring for mama goats, and potentially helping to deliver piglets, I don’t have the luxury of having the time or energy to cook elaborate meals.


I have not found my way to an instant pot yet, mostly because I can’t stand the idea of another kitchen gadget. More accurately, I can’t stand the thought of storing another kitchen gadget. Once again, when I find something I like, I stick with it…that bib overall wearing honey of mine is such a lucky man! Insert a wink and a smile here. However, I believe this recipe will work in a fancy-schmancy instant pot for all you up-to-date and kitchen gadget-loving cooks.


Here on the farm, we LOVE Chinese food. What we don’t love is the MSG, high sodium content, and high-fat content of Chinese restaurant food. Don’t get me wrong; we frequent our local Chinese buffet restaurant once a month or so. The owner is a grade-A individual, and we love supporting local restaurants. Time constraints and dietary limitations dictate my everything in moderation motto.


With Crock Pot Pepper Steak, we enjoy a favorite Chinese dish in the comfort of our home and at our convenience, without everything that is bad for us. Convenience is the name of the game during the kidding season. Without further adieu, Crock Pot Pepper Steak.


Crock Pot Pepper Steak


Ingredients:


2 lbs. Round Steak Cut Into Strips Against The Grain. (I Like To Use The Eye Of A Round Steak Cut Thin)

1 Green Bell Pepper Cut Thick

1 Red Bell Pepper Cut Thick

1 Large Sweet Onion Cut Thick

1 ½ Cups Low Sodium Beef Broth

3 TBLS Low Sodium Soy Sauce

¼ TSP Ground Ginger

¼ TSP Black Pepper

¼ TSP Garlic Powder

2 TSP Brown Sugar


Directions:


Place the beef, bell peppers, and onions in a slow cooker.

Add the seasonings, brown sugar, and soy sauce over the beef and peppers.

Pour the beef broth into the crock pot.

Stir to combine.

Cover and cook on low for 5-6 hours or high for 2.5-3 hours until the steak is tender.

Serve over a bed of rice of your choice. I prefer Jasmine rice.


I hope you find this recipe as delicious and convenient as we do, dear reader. Crock Pot Pepper Steak is what is on the menu for dinner tonight. With any luck, The Bibbed Wonder’s heritage breed large black hog, Dorothy, will deliver piglets this weekend. Please keep your fingers crossed and send some good vibes if you are inclined. After the last few weeks with our goats, an easy, drama-free delivery would be refreshing.
